1 and a third cups of low sodium beef broth
I like a chicken version too, I put one chicken thigh in all cut up and red pepper instead of green.
I like to cut up all of my veggies first and then I throw a little bit of olive oil in my pot, then the beef and veggies. I cook it up until my house smells like heaven. Then I add my broth and cook it until my veggies are soft enough and it just looks like soup!
