So I tweeked it!
1 hard boiled egg
grated carrots
grated celery
grated radish
1tsp mayo
two slices ancient grain bread
lettuce and tomato
replacing the second egg with carrot, radish and celery fills out the sandwich and it is yummy plus nutritious! Try it at home!
Alright - you go ahead and eat your egg salad but I'm just gonna say yucky poo! LOL
